This one is fantastic year-round and ticks all the right boxes.
2 oz mezcal
1 oz honey syrup (recipe below)
Juice of one lemon
Shake and pour over ice (I like these big cube molds for this)
HONEY SIMPLE SYRUP
1/2 cup medium hot (not boiling) water
1/2 cup honey
Whisk together until honey dissolves and then allow to cool before storing in the fridge. I like these swing top bottles for this.
